Pizza Muffins
These pizza muffins are so quick and easy to make. You can add any toppings you like to make different muffins to suit the whole family or to just use up what you have got left in the house. They also make a great lunch box filler.

Ingredients
- 1 english muffin
- 1 tbsp tomato puree
- 1 handful cheddar cheese grated
Choose 2-3 of the below topping suggestions or add your own
- 1 mushrooms
- 1 sweetcorn
- 1 peppers
- 1 spinach
- 1 ham
- 1 pineapple
- 1 basil leaves
- 1 olives
- 1 onions
- 1 tomatoes
Instructions
- Pre-heat your grill on high.
- Using a serrated knife, cut the muffin in two by cutting through the middle lengthways.1 english muffin
- Spread the tomato puree over the two muffins until evenly coated.1 tbsp tomato puree
- Add your cheese and chosen toppings, ensuring the toppings are cut appropriately for your baby.1 handful cheddar cheese
- Put under the grill for 2-3 minutes or until your cheese is melted and bubbling.
Notes
Serve immediately or pop them in the fridge and use them within 2 days (hot or cold!)
To reheat, you can pop the muffin back under the grill or reheat in the microwave until hot all the way through (approximately 60-90 seconds).
Please note; that frozen sweetcorn is not ready to eat. If using frozen sweetcorn as a topping, cook sweetcorn according to instructions prior to using.
