Banana Pancake

Banana Pancakes (makes five)

These are such a quick, easy and healthy breakfast. They go well with some greek yoghurt for your baby to dip them in or you can add some chopped fruit or cinnamon to mix up the flavour. 


Ingredients;

1 tbsp coconut oil

1 ripe banana

1 egg, whisked

1/4 cup of oats 


Method

  • Using a fork mash your banana in a bowl.
  • Add the whisked egg to the banana and mix well.
  • Add the oats and mix again.
  • Put the coconut oil into a frying pan on a medium heat.
  • Spoon one and a half tbsp of the mixture into the frying pan to make each pancake.
  • Fry for a couple of minutes on each side. 


These are super soft and can be given to your baby from six months old. These can be kept in an airtight container for a few days or frozen for up to three months. To cook from frozen just pop in the microwave for 20 seconds or until cooked through. Leave to cool before offering to you baby.
