Such a hearty and filling meal, full of healthy vegetables. Once cooked, chop the chipolatas into thin pencil like strips to serve for your baby. Serve with mashed potatoes or rice.
1 yellow pepper, deseeded & cut into chunks
2 carrots, cut into chunks
2 red onions, cut into wedges
10 cherry tomatoes
400g can chopped tomatoes
400g can haricot beans
200ml low salt chicken stock
2 tsp Dijon mustard
100g frozen peas
Leftover casserole can be frozen into small pots for your baby. You can even freeze leftover mash potato to make that freezer stash meal even quicker and easier to make. Just add a little unsalted butter to it when reheating the mash in the microwave so it doesn't dry out. To make this meal vegetarian swap the chipolatas for vegetarian sausages and adjust the cooking time of the sausages accordingly. You will also need to replace the chicken stock with vegetable stock.
