With most of the ingredients being spices that you've probably already got in the cupboard, this recipe is one you can make with only having to buy a few things. Packed with superfoods and spices this curry is one you definitley don't have to feel guilty about eating but still has the same great tastes a curry would give you. The sweet potato will be soft for you baby to enjoy from as young as six months. Best served with rice.
2 tbsp coconut oil (can sub with another cooking oil)
1 onion, finely chopped
2 garlic cloves, crushed
1 piece of ginger, grated (around 5cm)
1 tsp mustard seeds
1 tsp ground cumin
1 tsp coriander
1/2 tsp tumeric
1/2 tsp cayenne pepper
1/4 tsp ground cinnamon
400ml tin coconut milk
250ml low salt vegetable stock
3 large sweet potatoes, peeled & cut into 3cm cubes
100g baby spinach leaves, chopped
Leftovers can be frozen for up to three months. Freeze in small, snack pot sized containers for your baby to use on those nights when you just don't have time to cook or you need to eat seperately to your baby.
