Sweet Potato Patties
Servings 7 Patties
Ingredients
- 2 sweet potatoes peeled & chopped into small chunks
- 1 egg whisked
- 1 handful cheddar cheese grated
- 1 slice bread made into breadcrumbs
- 4 cherry tomatoes quartered
- 1 handful spinach finely chopped
- 1 spring onion finely sliced
Instructions
- Microwave the sweet potato until it’s soft enough to mash with the back of a fork, around six minutes.2 sweet potatoes
- Mash the sweet potato with the back of the fork.
- Add the egg and cheese and mix well.1 egg
- Add the spinach, tomatoes and spring onion and breadcrumbs and mix again.4 cherry tomatoes, 1 handful spinach, 1 spring onion, 1 slice bread
- Roll the mixture into around seven equal balls.
- Put a little oil in a frying pan.
- Add the balls and press down to flatten with the back of a spatula.
- On a medium heat, fry for a couple of minutes on each side.
Notes
Store any leftover patties in the fridge for 2 days or freeze for up to 3 months.
To freeze, place a piece of baking paper between each patty and place them into a labelled freezer bag for easy storage.
These can be eaten cold straight from the fridge (or once defrosted) or can be heated up from frozen. To reheat, pop them in the microwave and reheat in 30-second intervals until piping hot all the way through (it should take around 90 – 120 seconds).
