These little patties can be adapted to use up any leftover vegetables in your fridge. We love that everytime we make them they taste different because we've used slightly different ingredients.
2 sweet potatoes, peeled & chopped into small chunks
1 egg, whisked
1 handful cheddar cheese, grated
1 slice of bread, made into breadcrumbs
4 cherry tomatoes, quartered
1 handful spinach, finely chopped
1 spring onion, finely sliced
Can be frozen for up to three months. To reheat, pop in the microwave until hot through. These are super soft and are suitable for babies from six months.
