A savoury snack with lots of hidden goodness in them to get those all important vegetables into your little one. The great thing about these is you don't have to follow the recipe exactly. You can replace the vegetables with other vegetables in the house that you may want to use up.
200g cauliflower, grated
200g sweet potato, peeled and grated
2 medium carrots, grated
1 red onion, finely chopped
1 slice of wholemeal bread, blended to breadcrumbs
3 eggs, whisked (can sub for chia or flax egg to make this recipe egg free)
These can be stored in an airtight container for three days in the fridge or frozen for up to three months. To reheat from frozen pop in the oven or microwave and cook until they are hot all the way through.
